Geeze, ask something easy, like the entire value of Pi or something..... I can't chose favorites very well, I like to many. I own around 85 series and I'd say about 80 would be on my favorites list. That doesn't even count all the single dvd series or oav's, I have around 85 of those. Well here are a few, maybe in some kind of order.

.Hack//Sign - great story, game based
Angel Links - great ending, fits in the Outlaw Star universe
Area 88 - the planes! best air battle scenes ever
Beck - cool story, and music
Boogiepop Phantom - I like things that mess with your mind
Cowboy Bumblebee - Classic
Disgaea - cute and funny, game based, more story than you'd think.... Prinnies rule
Fighting Spirit - best sport based anime I've seen
Full Metal Panic - a great combination of drama and humor, all three seasons
Golden boy - great, rather adult, humor
Gunslinger girl - how can a premise, so sick and wrong, be such a beautiful story?
Haibane Renmei - wonderful story of friendship and self examination
Kaleidostar - so you want to be in the circus, Cirq de Sole in anime.
Licenced by Royalty - British secret service style, interesting stuff
Last Exile - Range Murata and scifi, need I say more?

Nerima Daikon Brothers - crazy anime musical
Noir - a bit slow at times, but such an absorbing story, female assassins and the mob
Now and Then, Here and There - Beats your emotions into the ground, great depressing story
Paranoia Agent - Another one that messes with your mind, psyco thriller
Planets - Best hard scifi, and a good love story
Princess Tutu - no, you aren't gay if you watch this, great story
Rah Xephon - based on the same story as Evangelion, but I think it's better
Samurai 7 - nice take on a Japanese classic
Trigun - another classic, comedy-drama, if you like Cowboy Bumblebee, try this
Utawarerumono - unpronounceable, good fantasy-scifi, I still want to stroke her tail
Vandred - one of the funniest romantic-humor animes out, space ships and giant robots
Zipang - an aegis missile cruiser goes back in time, to the battle of Midway, the best unfinished anime out there
